Vanillalicious Flapjack

Flapjacks are a great sweet treat to make with kids as the ingredients are really simple for little helpers to measure and mix - no messy eggs and sieving flour involved! I made these flapjacks with my daughter and she loved mixing the sticky gooey mixture (and licking the spoon afterwards).

I have to say these flapjacks have been a huge hit in our house, I've had requests to make them every week! They are really delicious and the combination of Vanillalicious milkshake, condensed milk, mixed nuts and fruit make them extra tasty.

Packed with energy-boosting oats, protein-rich seeds and calcium rich Vanillalicious milkshake, these flapjacks are perfect for school snacks and lunch boxes too.

Ingredients (makes 20 squares)

300g butter
240g golden caster sugar
4 tbsps golden syrup
50g condensed milk
150ml Shaken Udder Vanillalicious Milkshake
50g mixed seeds
75g raisins
75g dried apricots (I used Crazy Jack Apricots and chopped them into small pieces)
400g porridge oats

Method

- Preheat the oven to 170ºC and line a 30cm x 20cm tin with baking parchment.

- Melt the butter, golden syrup and sugar in a large pan over a low heat. Add the
condensed milk and Vanillalicious and remove from the heat.

- Stir in the seeds, fruit and oats and mix well until coated by the mixture.

- Pour into the tin and pat down with a spatula. Cook for about 20-25 minutes and remove
from the oven when the flapjack starts to brown around the edges of the tin.

- Leave to cool in the tin and then slice into squares.
