Perfect Picnic Recipes with Lurpak Spreadable Infusions


Summer is here and the arrival of this lovely weather means picnic season is upon us. If you're looking for something different to your usual ham sandwiches and pork pies then why not try adding Lurpak Spreadable Infusions to your sandwiches?

Lurpak has just launched Spreadable Infusions - a blend of Lurpak butter and rapeseed oil with added herbs and spices. The three different flavours, Chilli & Lime, Smoked Chipotle and Sea Salt & Pink Peppercorn all complement an assortment of breads from wraps and flatbreads to bagels and pittas. I tried the Sea Salt & Pink Peppercorn Spreadable Infusion on a wrap with some grilled chicken strips, mixed lettuce leaves, cucumber and a drizzle of mayonnaise and it was delicious, the sea salt and pink peppercorn added another dimension to what would have been just a regular sandwich. Next time we have a barbecue I'm going to try the other flavours spread on ciabatta with some marinaded barbecued meats - delicious!

Here are Dan's delicious recipes, perfect for lunch or a picnic in the garden on a summers day:

LAMB KEBAB IN PITTA WITH LURPAK® SPREADABLE INFUSIONS CHILLI & LIME (see main picture above)

Dust cubes of lamb with cumin powder, divide onto skewers and grill. Toast lightly and split the warm pitta open, generously then spread the inside with Lurpak® Spreadable Infusions Chilli & Lime and fill with salad and Greek-style yoghurt mixed with chopped fresh mint.



GRILLED CHEESE, ARTICHOKE & SUNDRIED TOMATO PANINI WITH LURPAK® SPREADABLE INFUSIONS SEA SALT & PINK PEPPERCORN

Grate Edam cheese and mix with a little Parmesan. Drain and quarter the artichoke hearts and sundried tomatoes, mix with the cheese and a sprig of fresh basil or flat-leaf parsley. Spread the panini generously with Lurpak® Spreadable Infusions Sea Salt & Pink Peppercorn, top with grated cheese, artichoke and fresh tomato mixture and bake until golden.



LURPAK® SPREADABLE INFUSIONS SMOKED CHIPOTLE & PULLED PORK BAGEL

With left over slow-roast pork, pull apart with a fork and heat until piping hot. Toast the bagel and spread it with lashings of Lurpak® Spreadable Infusions Smoked Chipotle and top with a big spoonful of pulled pork and fresh tomato salsa, made with finely chopped tomato, onion, gherkins and parsley.



HOT SMOKED SALMON ON SODA BREAD WITH LURPAK® SPREADABLE INFUSIONS SEA SALT & PINK PEPPERCORN

Slice and toast soda bread and spread with Lurpak® Spreadable Infusions Sea Salt & Pink Peppercorn. Top with homemade red cabbage slaw, made using chopped cabbage, a drizzle of olive oil and a squeeze of fresh lemon. Add flakes of hot smoked salmon, sprinkle chives over and serve as an open sandwich.













LURPAK® SPREADABLE INFUSIONS CHILLI & LIME BUTTERED FLATBREAD WITH PRAWNS

Peel and chop a clove of garlic and peel and slice a red onion. Fry until soft, add chopped, fresh, ripe tomatoes, cumin and garam masala in the pan. Spread a warm flatbread with Lurpak® Spreadable Infusions Chilli & Lime and add uncooked, peeled prawns to the pan and bring to a simmer. Once cooked, spoon over the flatbread.
